Recipe: Tuscan Style Pork Roast

Serves 4

  • 1 lb Pork Loin, Boneless

Season Pork Loin with the following ingredients in the morning and let marinade in the refrigerator until ready to cook.

  • 1 tsp Kosher Salt
  • 1 tsp Fresh Garlic
  • 1 tsp Black Pepper
  • 1 tsp Ground Rosemary
  • 1 tsp Fresh Thyme
  • 1/2 tbl Extra Virgin Olive Oil

Roast in oven at 400-450 degrees for 35 minutes or until internal temperature reaches 140 degrees, then set aside. While roast is cooking, start your sauce. Pre heat your sauté pan and add the olive oil, then the onion, garlic, pepper, tomato and all herbs. Cook for 2-3 minutes. Add the Chardonnay and cook another 2 minutes, then add the cream and simmer for 1-2 minutes. Set aside until roast is ready to be sliced. Slice 2 – 3 slices per portion, depending on desired thickness.

Sauce

  • 2 oz Chardonnay
  • 1/2 each Maui or Sweet Onion
  • 2 each Tomatoes, Diced
  • 3 oz Green Bell Pepper, Julienne
  • 1 tsp Garlic
  • 1/2 tsp Fresh Thyme
  • 1 tbl each Fresh Basil and Parsley
  • 2 tbl Extra Virgin Olive Oil
  • 2 oz Heavy Cream (add more if desired)

Additional

  • 2 tbls Sauce for top of sliced pork
  • 1 tbls Parsley, for Garnish (sprinkle over top)
  • 1 each Orange, Zest for Garnish (on center of portion 1 each)
